A Little Something for Lunch

My life has been really crazy for the last few months.  So much so that I've been pulled in a thousand different directions, and have fallen back into some old habits as far as eating goes.

And when I mean old habits, I mean like eat-a-whole-box-of-Ding-Dongs-by-myself kind of habits-- don't judge me!

So one day last week I noticed a box of boil-in-the-bag quinoa I had in the cupboard, and it prompted me to do a little afternoon cooking.  Now, before I shed those extra pounds last year, I would have never given quinoa a second thought. But once I gave it a try I was converted.

To me, it has a feeling of eating cornbread, which was the primary reason it won me over. And it is super versatile as far as adding ingredients to it and making it something special.  However, it can be tricky to cook with, and really requires lots of moisture in order to bring it optimal flavor.  I'm still learning to cook with it.

But this quick recipe was very tasty, and involved a super market shortcut.  And shortcuts are always a win on busy days.


Quick Quinoa Refrigerator Clean Out 

(I don't have a better name for it)

One boil-in-the bag tri-color quinoa, prepared according to package directions
1 medium carrot shredded
1/4 cup onions
garlic clove, minced
1 cup shredded cooked chicken
2 cups baby spinach leaves
1/2 cup or more of jarred alfredo sauce
Salt & Pepper
1Tbs of olive oil

Heat oil a medium saucepan, then add onions, carrots, and garlic until onions are translucent. Add chicken, quinoa, spinach, and alfredo sauce, and heat through. Add salt and pepper to taste.



I ate half of it, and refrigerated the left overs. It tasted even better the next day. 

Now if you will excuse me, I've been away from cooking/baking for a while and need to go play with my food.
