"Chicken Pot, Chicken Pot, Chicken Pot Pie"


I never really think about comfort food too much, because for this girl all food is comfort food. However the cold weather we've been experiencing here in Kentucky (18 degrees several days last week, which is not normal for us) has made me crave chicken pot pie!  I've always been in awe of home cooks who can whip up a pie crust and make everything from scratch, but that just isn't practical in my world.

I live in a world where the dishes stay piled up because by the time I clean half of them it is time to prepare another meal and then I get everything dirty again. Then it is time to play with the little one, or do the laundry, or feed somebody or a dog, and at the end of all that I'm just tired.  So I need a chicken pot pie that I can throw together and call it a day.  And this recipe basically just causes two pans to get dirty, and I can hang with cleaning just two things. (Notice how I'm not counting dirty dishes, because that would just stress me out.)


So here is my version of a fast chicken pot pie:

1 pound chicken tenderloins cut into equal size cubes
1 cup tater tots, microwaved to thawed (or hash brown patties)
1 small can peas/carrots
1 can cream of chicken soup
1/4 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon  dried minced onions
1 tablespoon olive oil
1 can of crescent rolls

Heat oven to 350 degrees. Take the oil and drizzle into a medium pot and heat on medium, then add the chicken and cook until no longer pink. While this is happening microwave the tater tots. When the chicken is done toss in the potatoes, peas/carrots, soup, milk, salt, pepper, and onions.  Give it a good mix and heat through then transfer it to a baking dish coated in non-stick cooking spray (I use a 9 inch pie pan). Cover with the crescent rolls and bake for 15 minutes.

When I'm feeling extra adventurous I add cheedar cheese over the top before I place the crescent rolls. I've  used store bought rolled pie crust and canned biscuits, but I prefer the crescent rolls the most. By the time I prep it and bake it I'm usually done and eating within an hour.
