Hello 2014

It has been a very long time since I've made an entry, and this is mostly due to the fact that I did not have an oven for almost a year.  It has been a great challenge trying to cook when you are limited to the stove top, and in addition to the oven going out our microwave decided to die shortly afterward.
Thus the inexpensive toaster oven came into our lives.  It turned out not the be the game changer I had hoped, and even though I could bake little treats in little pans with little work, it is not the same as having a full size oven!
Thanks to a former neighbor (who also happened to be an appliance repairman) we were finally able to get the confounded thing repaired in December and I'm back in baking business!

Taking a year off from writing was not something that I really wanted to do, but sometimes life throws you challenges and you have to really come to terms with who you are and how you are going to handle them.  In the last two years I've had to deal with a job loss, trying to get back on track while becoming a homeschooling family and struggling to keep my head above water almost everyday...so needless to say I've failed more times than I care to share.

Through this break I have learned that I can make things come together when I need to. I'm stronger than I think. And no matter how hard I try to make things happen quickly, God will always have his sweet, perfect time.

Looking back I wasted time not chronicling my journey without an oven.  I was too busy thinking of all the things I couldn't do instead of recording all the ways I got around it. That is pretty much the life of an pessimist with anxiety problems.

So I'm back and can't wait to share more experiences with cooking and baking in my little house, in my little town, with my little family with the great big appetite!
