God bless canned biscuits


I had a very magical shopping experience at Kroger recently. They happened to have a fabulous sell on items for which I had fabulous coupons, so I was able to knock out a few suppers to feed the three of us for less than $4 per meal.  They may not have been the healthiest, but they were easy, cheap and no one went to bed hungry...well one of us did, but more on that story later.

Years ago I tried a recipe for barbecue meat cups, and since I was stocked on Pillsbury Grands biscuit dough thanks to my Kroger excursion (99 cents a can!) I decided to pull this quick dish together after work one night. It doesn't get any easier than lining a muffin tin with a biscuit, filling it with browned ground beef drenched in BBQ sauce, and then covering with cheese.  As luck would have it I had browned the meat the night before which made the prep time even faster.  After a long day at work the last thing I want to do is come home and spend another hour on a meal. Not when there is a little one who hasn't seen me all day and really needs my attention.



The second night was a can of biscuits, some Ragu pasta sauce (free jar with coupon, and for some reason the free one always tastes better), some cheese, and a large pepperoni baton sliced up in a food processor and dinner is served! The pepperoni was a gift to my daughter from my parents. Only they would give a 5-year-old a 2 ft. stick of pepperoni as a present...but anyhoo.

My husband and I enjoyed both meals, however, my child did not.  She licked the BBQ cups and declared them to be disgusting, and took one bite of the pizza and announced the crust wasn't right and refused to eat any more of it. I am the queen of picky eaters, so she comes by it honestly. I usually make my own pizza crust and will totally take her side on the taste difference. But sometimes you have to make do with the resources that you have, and even if these ventures weren't successful for her at least I  could show her that sometimes you just have to work with what you have.

On a side note: if meat gets any more expensive we may have to eat one of our dogs. I've already called  "dibs" on our Labrador's juicy thigh.
